Egg Roll Heaven...Stuffed to the Gills.

Today was a pretty good day. It went by pretty fast and I had the most wonderful dinner. I was clicking around Hungry Girl's web site and found a recipe for some Egg Rolls, the recipe sounded really easy so I copied it to try for later. Well David cooked Tator Tot Casserole for dinner and I knew I should stay away from that so I went after I picked up Kayla from school to get the stuff I needed to make them and a couple other simple recipes I found on her awesome site.

Here is the recipe:
6 large square egg roll wrappers (found in the refrigerated section of the supermarket with the other Asian items)
4 cups (about half of a 12-oz. bag) dry coleslaw mix
One 6-oz. can (4 oz. drained) tiny shrimp, drained
1/2 cup canned water chestnuts, drained and sliced into strips
1/4 cup bean sprouts, chopped
2 scallions, chopped
1 stalk celery, thinly sliced width wise
2 tbsp. light or low-sodium soy sauce
1 tsp. crushed garlic
1/4 tsp. ground ginger
1/8 tsp. salt
dash pepper
Optional: sweet & sour sauce, for dipping

Directions:
Preheat oven to 375 degrees.

Place slaw mix in a microwave-safe bowl with 2 tbsp. of water, cover, and microwave for 2 minutes. Drain any excess water, and transfer slaw mix to a large bowl. Add all other ingredients except for the wrappers, mix well, and set aside. Prepare a large baking sheet by spraying it lightly with nonstick spray.

Evenly distribute about 1/2 cup of the mixture onto each wrapper, in a row a little below the center. Moisten all four edges of each wrapper by dabbing your fingers in water and going over the edges smoothly.

Repeat process with remaining wrappers and filling, making sure you have a clean, dry surface each time.

Spray the tops of the egg rolls with nonstick spray. Bake in the oven for 25 - 30 minutes, until golden brown. Allow to cool slightly.

MAKES 3 SERVINGS

These things were AWESOME. I put in all the ingredients over on the WW site recipe builder just to make sure how many points it was, it was 10 points total. So I ate every single one of them. I am so stuffed but dang they were good. They were very easy to make too.

I got such nice emails from my family today about my blog. They always support me so much. I really hope that this time I can do this and not disappoint them. Who know by the next time we all get together we may need name tags! LOL

Well tomorrow is the big day. I head back to Curves. I am looking forward to it, and I'm dreading it. I know I love the way it makes me feel, and I KNOW I need it, I just don't like the extremely young girl they have working the counter in the evenings. Don't get me wrong, shes plenty nice enough, but I am just not comfortable with myself let alone to go in there in front of a 19 year old that looks like she could use a doughnut or 5. But I am gonna put that away and get in there and sweat my hiney off. Sweat some of this fat off. Wish me luck.
